Water Activity is a measurement that reflects a product's potential for microscopic growth and directly correlated with the vapor pressure of available water in the material. A product with low water activity is less hospitable to growth, while high water activity will be more conducive. Water activity is measured using a hygrometer that measures the vapor pressure of a sample and calculates a value between 0-1 called Aw, or water activity units.

Water activity is expressed as a ratio, ranging from 0 to 1 (completely dry to pure water). The result, presented as “Aw” is the ratio of the vapor pressure of water in your product to the vapor pressure of pure water at the same temperature. This is critical for determining the shelf life and safety of infused products, as well as predicting the growth of microorganisms.

Using a hygrometer instrument, we will measure your water activity. It is important to note that microorganisms have specific water activity ranges in which they can grow, for example: Most bacteria: Aw > 0.90; most yeasts: Aw >0.80; most molds: Aw >0.70.
